Boil, in a quart of water, for twenty minutes, two pounds of loaf sugar, then put in the barberries, let them simmer for an hour, and pour them into a glazed pan.

Next day strain the syrup, add to it another pound of sugar, and let it simmer for half an hour, put in the fruit again, and when the syrup is about to boil take it off; when quite cool, put the preserve into proper jars, and tie down with leather or bladder, having brandied paper on the top of the fruit.
